Given the expected high footfall, the kitchen was designed with a strong focus on operational efficiency and the durability of equipment capable of withstanding demanding use. The restaurant aims to offer a fairly wide menu, which required careful consideration of the suitability and placement of each piece of equipment. The kitchen space is divided into several sections, which called for a well-thought-out and cohesive layout concept.
In the heart of Prague, just a few steps from the bustling streets of the Old Town, a new Italian-Spanish restaurant has opened, offering authentic Mediterranean dishes, including Neapolitan-style pizza. The restaurant is located in fully renovated premises that captivate at first glance – blending modern design with historic charm to create a pleasant and stylish atmosphere for everyday dining as well as special occasions.
The kitchen is dominated by a two-level pizza oven with independently controlled chambers, allowing for optimal pizza preparation according to the chef’s preferences. It is followed by a comprehensive 900-series cooking line concept, which includes a gas range, bain-marie, griddle, lava rock grill, and preparation tables.
For à la carte cooking, the kitchen features a pasta cooker, gas range, induction cookers, and a 10 x GN 1/1 combi oven.
The dishwashing area for tableware includes an RM dishwasher with heat recovery, complemented by a functional space for receiving dirty dishes, pre-rinsing, and storing clean ones.
The area for washing kitchen utensils is equipped with a large sink with a pressure spray arm and an RM utensil washer. Ample storage is provided through wall-mounted shelves, cabinets, and racks.
The cold kitchen and prep areas are fitted with refrigerated drawer tables.
All cooling technologies are located in a separate room, and the kitchen is further enhanced with professional equipment such as a dough mixer, vegetable slicer, vacuum packer, blast chiller, and meat grinder – everything necessary for the high-quality preparation of a wide range of dishes.
